1. Tomato Cucumber Salad
Imagine juicy garden tomatoes—the perfect complement to cucumbers. They're also abundant in summer. Toss them together with your favorite dressing for a quick meal.
Ingredients
For Salad
- 1 English cucumber (sliced)
- 1 pint of cherry tomatoes (halved)
- ½ red onion (sliced)
For dressing
- Salt and pepper
- 2 tablespoons maple syrup
- ¼ cup red wine vinegar
- 1 teaspoon dried oregano
Instructions
- Start by putting the sliced tomatoes, cucumbers and onion in a bowl.
- Next, take a small bowl and mix the dressing substances.
- Now, pour the dressing over the salad aggregate. Lightly toss to coat the veggies.
- Cover the very last mix with plastic wrap and refrigerate for approximately 30 minutes to couple of hours.
- You can garnish with fresh herbs and squeeze a lemon before serving.
